2 or 3 Ingredient SUPER SIMPLE Keto “Cheesecake Fat Bomb”

Ok, this is new territory for me…  A recipe post!  This is for a super delicious treat you can enjoy guilt free!  Super Simple Keto Cheesecake Fat Bomb!

But first a little story of the “first” time I cooked …

The very first time I cooked something solo, I think I was 6 or 7.  I had just gotten home from school, and in the 1970’s, it wasn’t that crazy for a kid to come home from school, and Mom would be a few minutes late from something or other…

In this case though, the phone was ringing when I came through the door, and Mom’s car wasn’t in the garage.  I answered the phone like a polite little 6-7 year old would, “Hello, this is the Hachey residence.”  Well, after thanking me for answering the phone properly, Mom told me I was going to have to get dinner started since she was going to be late… I gulped a bit.  Mom was on the phone telling me I could do this, she was going to talk me through it…  I had learned how to use the stove and oven from Mom and Grams, mostly during the holidays. Thanksgiving and Christmas I would help with cooking the turkey and all the stuff that goes into those big meals, but this was different, I was on my own…

All By Myself…

I needed to go to the Fridge and take out the whole chicken that was to be tonight’s dinner.  I stretched the old phone cord all the way across the kitchen, opened the door of the fridge, and there it was…  At least it was out of the package, and mostly ready to go, but I was going to cook it!  Mom told me to take out some butter too.  Well, my little hands/arms couldn’t handle both at the same time, and the chicken ended up on the kitchen floor… thud…  Oh, I’m off to a great start!

I picked up the chicken and put it back on the plate and put it on the counter. (I didn’t tell Mom I dropped it.)  Next, I went to the cabinet and got out a roasting pan to put the chicken in to cook.  On the way, Mom coached me to turn on the oven; 375 degrees.  I had the chicken, the butter, so, following Mom’s directions, I cut the butter into little pieces and placed it in top of the chicken.  Mom then told me to get some salt pepper, and dried rosemary, and to sprinkle them on the chicken.  You might guess that this didn’t go perfectly either… too much salt, too much pepper, and too much rosemary.  More is better, right?

And Boom, I’m a Cook!

Into the Oven it went…  Mom got home before the chicken was ready, so she took over from there, but I had successfully cooked dinner!  Well, successfully was a relative term.  I had dropped the chicken, and didn’t tell anyone, even my brother didn’t know, and he was in the Den watching TV.  I WAY over-seasoned the Chicken, but when it was done, everyone said they loved it, except Derrick,  my little brother…  He said it had too much salt on it!  Mom and even Dad said it was great!  I know now, that it was probably barely edible, but Mom and Dad remained positive about it.  I loved it, because, and likely ONLY because I had made it myself.  It was a bit salty…

Ok, on to the Recipe…  My Super Simple 2-3 Ingredient Keto Cheesecake Fat Bomb!

Ghirardelli Bittersweet 60% Cacao Chips
These are the Chips I used

This is probably the EASIEST thing I have ever made, much easier than that chicken.

The recipe contains TWO ingredients, with the option to add a third.

One 8oz block of Cream Cheese

¼ Cup of Peanut Butter (I used All Natural, Organic, no sugar added Peanut Butter)

A small amount of DARK Chocolate 60% or higher Cacao content chips…  I used Ghiradelli Bittersweet 60% Cacao Baking Chips. 

 

Directions:

  1. Soften Cream Cheese at room temperature until soft enough for Step 2
  2. Put Cream Cheese and Peanut Butter in a Food Processor.
  3. Turn on Low, then High… If you want to add the Chocolate Chips, now is the time.
  4. You have to pay attention, the mixture may need to be pushed down on the sides.
  5. The last time I made these, it took about 90 seconds to be thoroughly mixed, and for the chocolate chips to be chopped and thoroughly mixed in.
  6. Line a baking sheet with Waxed Paper.
  7. With a spoon, scoop out the mixture onto the waxed paper. They should be about the size you can eat in 2 to 3 bites.
  8. Put the sheet in the Freezer. I let mine sit overnight until thoroughly solid.
  9. Take out the sheet and remove the “bombs” from the waxed paper and put in a resealable bag.
  10. You’re done!

Well, you’re not totally done…  You have to try one of them, as long as you are in your eating window!  What good cook doesn’t sample their creation?!?

Nutritional Information… Really?

Fat Bombs! Yes, I tried a couple 🙂

Some of you may wonder about the nutritional information…  Well, it’s Cream Cheese, and Peanut Butter, with optional chocolate chips… Not exactly Rocket Science.  There is going to be a fair bit of Fat from the Cream Cheese and Peanut Butter, a bit of Protein, and very few carbs…  More if you add the Chips, less if you don’t.  I can’t really tell you how many Calories are going to be in each one because you will decide how big they are, and frankly, I don’t really care about Calories.

If you are following an Intermittent Fasting/LCHF/Keto WOE, like me, you probably don’t really care about calories anyway.  Eat and enjoy these, I know they are a great after dinner treat that tastes great, and most importantly, don’t spike insulin.

Guilt Free… Sorta.

To this day, I never admitted to Mom that I had dropped the Chicken on the floor, nor anyone else in the family… Sorry Derrick!  Mom and Dad have passed away, so they never heard it from me directly, but I think deep down Mom knew, because she heard it through the phone 😊 Mom never called me out on it, she was awesome, and supported me for the effort and gumption of doing it!
